Gluten-Free Orange Cake
Adapted from Smitten Kitchen by April Agee, this crowd-pleasing dessert cake features cornmeal and almond flour, offering luxurious gluten-free flavor.
Ingredients:
1 1/2 cups almond flour
1/2 cup cornmeal
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup sugar
3 large eggs
1/2 cup almond ricotta
1/2 cup blood orange juice
Zest of 1 blood orange
1/2 cup melted butter or oil
1/4 cup caramel sauce (for drizzling)
1 Cara Cara orange, sliced (for garnish)
Instructions:
Preheat oven to 350°F; grease a 9-inch cake pan.
Whisk almond flour, cornmeal, baking powder, and salt in a bowl.
Beat sugar, eggs, ricotta, orange juice, zest, and butter until smooth; fold in dry ingredients.
Pour into pan, bake 30-35 minutes until a toothpick comes out clean.
Cool, drizzle with caramel, and garnish with orange slices before serving.
