Gluten-Free Orange Cake

Adapted from Smitten Kitchen by April Agee, this crowd-pleasing dessert cake features cornmeal and almond flour, offering luxurious gluten-free flavor.

Ingredients:

  • 1 1/2 cups almond flour

  • 1/2 cup cornmeal

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 3/4 cup sugar

  • 3 large eggs

  • 1/2 cup almond ricotta

  • 1/2 cup blood orange juice

  • Zest of 1 blood orange

  • 1/2 cup melted butter or oil

  • 1/4 cup caramel sauce (for drizzling)

  • 1 Cara Cara orange, sliced (for garnish)

Instructions:

  1. Preheat oven to 350°F; grease a 9-inch cake pan.

  2. Whisk almond flour, cornmeal, baking powder, and salt in a bowl.

  3. Beat sugar, eggs, ricotta, orange juice, zest, and butter until smooth; fold in dry ingredients.

  4. Pour into pan, bake 30-35 minutes until a toothpick comes out clean.

  5. Cool, drizzle with caramel, and garnish with orange slices before serving.
